Ingredients

For the Filling:

2 cups cooked chicken, diced (you can use rotisserie chicken for convenience)

1 cup carrots, diced

1 cup celery, diced

1 cup frozen peas

1 cup potatoes, peeled and diced

1/2 cup onion, chopped

4 tablespoons butter

1/3 cup all-purpose flour

3 cups chicken broth

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

6 tablespoons unsalted butter, cold and diced

3/4 cup milk

Instructions

Prepare the Filling:

    - In a large pot, melt 4 tablespoons of butter over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they start to soften.

      - Stir in the flour and cook for another minute to create a roux. Gradually whisk in the chicken broth until smooth. Bring to a simmer and let it thicken for about 5-7 minutes.

        - Add in the potatoes, chicken, peas, thyme, garlic powder, salt, and pepper. Mix well, then remove from heat and set aside.

          Make the Biscuit Topping:

            - In a medium bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

              - Add the milk and stir until just combined. Do not overmix; it's okay if there are a few lumps.

                Assemble the Pie:

                  - Preheat your oven to 425°F (220°C).

                    - Transfer the chicken mixture into a 9-inch pie dish or a large oven-safe skillet.

                      - Use a spoon or your hands to drop spoonfuls of the biscuit mixture over the top of the chicken filling. Ensure to leave some space between the biscuit drops for expansion.

                        Bake:

                          - Place the assembled pot pie in the preheated oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.

                            Serve:

                              - Let the pot pie cool for about 10 minutes before serving. This allows the filling to settle slightly. Enjoy the warm and comforting flavors of this homestyle chicken pot pie!
