2 medium zucchinis (spiralized into zoodles)

1 lb (450g) chicken breast, diced

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup low-fat cream cheese, softened

1 cup unsweetened almond milk (or regular milk)

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup baby spinach (optional)

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts, seasoning with salt, pepper, garlic powder, and Italian seasoning. Cook until the chicken is golden and cooked through, about 6-8 minutes. Remove from heat and set aside.

      Prepare the Alfredo Sauce: In a medium saucepan over low heat, combine the cream cheese and almond milk. Stir continuously until the cream cheese is fully melted and the mixture is smooth. Gradually add the grated Parmesan cheese, stirring until well combined. Season with salt and pepper to taste.

        Combine Ingredients: In a large bowl, mix the cooked chicken with the zoodles, spinach (if using), and Alfredo sauce until everything is well coated.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly and sprinkle the shredded mozzarella cheese on top.
