2 large sweet potatoes, peeled and thinly sliced

1 cup sharp cheddar cheese, shredded

1 tablespoon olive oil

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1 teaspoon garlic powder

Salt and pepper, to taste

1 pre-made pie crust (or homemade, if preferred)

1 egg, beaten (for egg wash)

Fresh parsley, for garnish

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss sweet potato slices with olive oil, rosemary, thyme, garlic powder, salt, and pepper until evenly coated. Set aside.

    Roll Out the Dough: If using a pre-made pie crust, roll it out on a floured surface to about 1/8 inch thick. If making homemade dough, prepare it according to your recipe until it's ready to roll. Cut the rolled dough into 4 equal circles (about 8 inches in diameter).

      Layer the Ingredients: Place a layer of sweet potato slices in the center of each dough circle, leaving a 1.5-inch border. Sprinkle a generous handful of shredded cheddar cheese over the sweet potato layers.

        Fold the Edges: Carefully fold the edges of the dough over the filling, pleating as you go. Leave the center exposed for a rustic appearance.

          Egg Wash: Brush the edges of the galettes with the beaten egg to give them a golden color while baking.

            Bake: Place the galettes on a parchment-lined baking sheet. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the sweet potatoes are tender.
