Herbed Ricotta Tomato Galette Bites

For the Galette Dough:

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon sugar

½ cup unsalted butter, chilled and cubed

4-5 tablespoons ice water

For the Filling:

1 cup ricotta cheese

½ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped

2 tablespoons fresh parsley, chopped

1 clove garlic, minced

Salt and pepper to taste

1 tablespoon lemon juice

For Topping:

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Balsamic glaze for drizzling (optional)

Fresh basil leaves for garnish

Instructions
 

Make the Galette Dough:

    - In a mixing bowl, whisk together the flour, salt, and sugar.

      - Cut in the chilled, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

        - Gradually add ice water, one tablespoon at a time, until the dough starts to come together.

          - Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

            Prepare the Filling:

              - In a medium bowl, combine the ricotta cheese, grated Parmesan, chopped basil, chopped parsley, minced garlic, lemon juice, salt, and pepper. Mix until well combined and set aside.

                Preheat the Oven:

                  - Preheat your oven to 400°F (200°C) while you assemble the galettes.

                    Roll Out the Dough:

                      - Remove the chilled dough from the refrigerator and place it on a floured surface. Roll it out into a thick circle, about 1/4 inch thick. Cut out smaller circles using a cookie cutter or a glass, about 3 inches in diameter.

                        Assemble the Galette Bites:

                          - Place the dough circles on a parchment-lined baking sheet.
