Herbed Lemon Couscous Bowls

Ingredients
  

1 cup couscous

1 ½ cups vegetable broth or water

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 avocado, sliced

1 cup chickpeas, rinsed and drained

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

Crumbled feta cheese (optional)

Microgreens or sprouts for garnish (optional)

Instructions
 

In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, stir in the couscous and salt. Remove the saucepan from the heat, cover it, and let it sit for about 5 minutes to allow the couscous to absorb the liquid.

    After 5 minutes, fluff the couscous with a fork and stir in the olive oil, lemon zest, lemon juice, black pepper, chopped parsley, and chopped mint. Mix well to combine all the flavors.

      In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced avocado, and chickpeas. Gently toss these ingredients together.

        Divide the herbed lemon couscous into serving bowls. Top with the vegetable and chickpea mixture.

          For an extra touch, sprinkle crumbled feta cheese on top and garnish with microgreens or sprouts if desired.
