2 pounds Yukon Gold potatoes, thinly sliced

1 cup heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Dijon mustard

1 tablespoon unsalted butter (for greasing dish)

¼ cup grated Parmesan cheese (for topping)

Fresh parsley (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Dish: Grease a 9x13 inch baking dish with butter. Set aside.

      Whisk the Base: In a medium mixing bowl, combine the heavy cream, whole milk, minced garlic, chopped rosemary, thyme, salt, black pepper, and Dijon mustard. Whisk until fully combined.

        Layer the Potatoes: Arrange half of the sliced potatoes evenly in the prepared baking dish. Pour half of the cream mixture over the potatoes, spreading it evenly.

          Add Cheese: Sprinkle half of the shredded cheddar cheese over the cream-covered potatoes.

            Repeat Layers: Place the remaining potato slices on top, then pour the rest of the cream mixture over them. Finally, layer the remaining cheddar cheese on top.

              Add Parmesan Topping: Sprinkle grated Parmesan cheese evenly over the top for an extra flavorful crust.
