Ingredients

1 lb sirloin steak, cut into 1-inch cubes

1 tablespoon olive oil

Salt and pepper, to taste

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

1 tablespoon fresh oregano, finely chopped (or 1 teaspoon dried oregano)

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

Juice of 1 lemon

Instructions

Prepare the Chimichurri Sauce: In a medium bowl, combine the chopped parsley, cilantro, oregano, minced garlic, red pepper flakes, red wine vinegar, lemon juice, and extra virgin olive oil. Mix well until all ingredients are combined. Season with salt and pepper to taste. Set aside to let the flavors meld while you cook the steak bites.

Marinate the Steak: In a bowl, toss the cubed sirloin steak with 1 tablespoon of olive oil, and season generously with salt and pepper. Let the steak marinate for about 15-30 minutes at room temperature to enhance the flavor.

Sear the Steak Bites: Preheat a large skillet or grill pan over medium-high heat. Once hot, add the marinated steak bites in a single layer, ensuring they don’t overcrowd the pan. Cook for 2-3 minutes on each side for medium-rare, adjusting the cooking time for your preferred doneness. Remove the steak bites from the pan and let them rest for a couple of minutes.

Serve: Arrange the steak bites on a platter and drizzle with the prepared chimichurri sauce, reserving some for dipping on the side. Garnish with extra chopped herbs if desired.

Enjoy: Serve the chimichurri steak bites warm with your choice of sides, such as crusty bread, grilled vegetables, or a fresh salad.
