Ingredients

4 (6 oz) cod fillets

1 cup fresh breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh dill, finely chopped

2 tablespoons fresh chives, finely chopped

2 cloves garlic, minced

Zest of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Herb Crust: In a mixing bowl, combine the breadcrumbs, Parmesan cheese, parsley, dill, chives, minced garlic, lemon zest, olive oil, salt, and pepper. Mix well until the mixture is evenly moistened.

Season the Cod: Pat the cod fillets dry with a paper towel. Season both sides with salt and pepper. Place them on the prepared baking sheet.

Apply the Herb Mixture: Carefully press the herb crust mixture evenly on top of each cod fillet, ensuring an even coating.

Bake the Cod: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the cod is opaque and flakes easily with a fork, and the crust is golden brown.

Prepare the Lemon Drizzle (optional): While the fish is baking, mix some extra olive oil with fresh lemon juice and a pinch of salt in a small bowl for an additional drizzle if desired.

Serve: Once done, remove the cod from the oven, allow to rest for a couple of minutes, and serve with lemon wedges and the optional lemon drizzle on the side. Enjoy!
