1 cup green or brown lentils, rinsed

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (red or yellow), chopped

1 zucchini, diced

1 cup diced tomatoes (canned or fresh)

6 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon black pepper

1 bay leaf

Salt to taste

2 cups kale or spinach, chopped

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 4-5 minutes).

    Add the Vegetables: Add the carrots, celery, and bell pepper to the pot. Cook for another 5-7 minutes, stirring occasionally, until they start to soften.

      Incorporate Zucchini and Spices: Stir in the zucchini, diced tomatoes, cumin, thyme, smoked paprika, black pepper, and bay leaf. Cook for an additional 2-3 minutes until the spices become fragrant.

        Add Lentils and Broth: Pour in the rinsed lentils and vegetable broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes or until the lentils are tender.

          Finish with Greens: Stir in the chopped kale or spinach and cook for an additional 5 minutes until the greens are wilted.

            Season and Serve: Remove the bay leaf, then stir in the lemon juice and adjust the salt to taste. Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
