Hearty Turkey and Sweet Potato Chili

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 medium sweet potatoes, peeled and diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

2 cups chicken broth

2 tbsp olive oil

2 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prep the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5-7 minutes, until softened. Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.

    Brown the Turkey: Add the ground turkey to the pot. Break it apart with a spoon, cooking until it's browned and no longer pink, about 5-6 minutes. Make sure to stir occasionally for even browning.

      Add Sweet Potatoes and Spices: Stir in the diced sweet potatoes, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for about 2-3 minutes to allow the spices to bloom.

        Combine Liquids & Beans: Pour in the crushed tomatoes and chicken broth. Add the kidney beans and black beans, stirring everything together until combined.

          Bring to a Simmer: Increase heat to bring the chili to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the sweet potatoes are tender and the flavors have melded beautifully.

            Taste & Adjust Seasoning: Before serving, taste the chili and adjust seasoning with more salt, pepper, or cayenne if desired.
