1 cup dried green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 medium potato, peeled and diced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, with their juice

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon ground cumin

1 bay leaf

Salt and pepper to taste

2 cups spinach or kale, chopped

1 tablespoon lemon juice (optional)

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes or until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Remaining Vegetables: Add the diced carrots, celery, potato, and bell pepper to the pot. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

      Combine Lentils and Spices: Stir in the rinsed lentils, diced tomatoes (with juice), vegetable broth, dried thyme, ground cumin, bay leaf, salt, and pepper. Mix well to combine all ingredients.

        Simmer the Stew: Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the lentils are tender and the stew has thickened. Stir occasionally and check for seasoning, adjusting salt and pepper as needed.

          Add Greens: Once the lentils are cooked, stir in the chopped spinach or kale. Allow it to wilt for about 5 minutes, then remove the pot from heat.
