Ingredients
  

1 lb (450g) ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 medium onion, diced

3 cloves garlic, minced

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup beef broth

2 tbsp olive oil

1 bell pepper (any color), diced

Optional toppings: shredded cheese, sour cream, chopped green onions, or cilantro

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and diced bell pepper, and sauté for an additional 1-2 minutes until fragrant.

    Brown the Beef: Push the vegetables to the side of the pot and add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-6 minutes). Drain excess fat if necessary.

      Spice It Up: Once the beef is browned, add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to coat the meat and vegetables with spices.

        Add the Beans and Tomatoes: Pour in the diced tomatoes (with juices) and add the drained black beans and kidney beans. Stir to combine.

          Simmer the Chili: Pour in the beef broth and bring the mixture to a boil. Lower the heat and let it simmer for about 10-12 minutes, stirring occasionally. Adjust seasoning if necessary.

            Serve: Once thickened to your liking, remove from heat and ladle into bowls. Add your choice of toppings such as shredded cheese, sour cream, green onions, or cilantro if desired.
