1 lb ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup beef broth

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, cilantro, sliced jalapeños

Instructions
 

Heat the Olive Oil: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.

    Cook the Ground Beef: Add the ground beef to the pot. Use a spatula to break it up and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.

      Sauté the Vegetables: Add the diced onion and minced garlic to the pot. Cook for an additional 2-3 minutes until the onions are translucent.

        Stir in Spices: Sprinkle in the chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to coat the beef and onions in the spices.

          Add the Beans and Tomatoes: Pour in the drained kidney beans, black beans, diced tomatoes (with their juices), and beef broth. Stir to combine everything.

            Simmer: Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for about 15-20 minutes, stirring occasionally. This allows the flavors to meld together.
