1 cup pearl barley

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 red bell pepper, diced

1 medium zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup diced tomatoes (canned or fresh)

6 cups vegetable broth

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Barley: Rinse the pearl barley under cold water. In a pot, bring 4 cups of vegetable broth to a boil, add the barley, and cook for about 30 minutes or until tender. Drain excess water and set aside.

    Sauté the Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.

      Add Remaining Vegetables: Stir in the carrots, celery, red bell pepper, zucchini, and green beans. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.

        Combine Ingredients: Add the diced tomatoes, the remaining vegetable broth (2 cups), cooked barley, dried thyme, and rosemary to the pot. Stir well to combine.

          Simmer the Stew: Bring the mixture to a boil, then lower the heat to a simmer. Cover and let it cook for 20 minutes, allowing the flavors to meld together.

            Season and Serve: After simmering, season the stew with salt, pepper, and lemon juice. Stir well and taste, adjusting the seasonings as needed.
