4 medium zucchinis, chopped

1 medium onion, diced

2 garlic cloves, minced

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup fresh basil leaves, packed

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon lemon juice (optional)

A sprinkle of chili flakes (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Then, add the minced garlic and sauté for an additional 1 minute until fragrant.

    Add the Vegetables: Stir in the chopped zucchinis and diced potato. Cook for about 5 minutes, stirring occasionally, until the zucchinis start to soften.

      Pour in the Broth: Add the vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes or until the vegetables are tender.
