Ingredients

1 medium zucchini (about 1 cup shredded)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup honey or maple syrup

1/3 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (optional but recommended)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch (20x20 cm) baking dish or line it with parchment paper for easy removal.

Prepare the Zucchini: Wash the zucchini thoroughly. Grate it using a box grater or a food processor. After shredding, use a clean kitchen towel to squeeze out excess moisture from the zucchini. This step is crucial to avoid soggy brownies.

Mix Dry Ingredients: In a mixing bowl, combine the whole wheat flour, cocoa powder, baking soda, baking powder, and salt. Whisk together until well-blended.

Combine Wet Ingredients: In another large bowl, whisk together the honey (or maple syrup), applesauce, eggs, and vanilla extract until smooth.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Carefully fold in the shredded zucchini and the dark chocolate chips and nuts if using.

Bake: Pour the brownie batter into the prepared baking dish, spreading it evenly. Bake in your preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool and Serve: Allow the brownies to cool in the pan for about 10-15 minutes before transferring them to a wire rack to cool completely. Cut into squares and enjoy your healthy treat!
