Ingredients

1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4 whole wheat pita breads

1 cup fresh spinach leaves, chopped

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/2 cup tzatziki sauce (store-bought or homemade)

Fresh lemon wedges for serving

Instructions

Marinate the Chicken: In a bowl, combine the olive oil, dried oregano, garlic powder, salt, and black pepper. Add the chicken breasts and coat them in the marinade. Let them sit for at least 30 minutes to absorb the flavors.

Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Let it rest for 5 minutes before slicing it into strips.

Prepare the Pita Wraps: While the chicken is resting, warm the whole wheat pita breads in a dry skillet or microwave for about 30 seconds until soft and pliable.

Assemble the Wraps: Lay a warm pita on a plate. Spread a tablespoon of tzatziki sauce in the center. Layer on the fresh spinach, diced cucumber, halved cherry tomatoes, sliced red onion, and crumbled feta cheese. Top with sliced grilled chicken.

Wrap it Up: Fold the sides of the pita inwards and then roll it up from the bottom to encase the filling. Secure with a toothpick if necessary. Repeat with the remaining pita bread.

Serve: Serve the wraps with fresh lemon wedges on the side and additional tzatziki sauce if desired.
