Healthy Beef Stroganoff with Whole Wheat Noodles

1 lb (450g) lean beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

1 cup low-sodium beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1 cup Greek yogurt (or low-fat sour cream)

Salt and pepper, to taste

8 oz (225g) whole wheat egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the whole wheat egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the sliced beef. Sear for about 3-4 minutes until browned but not fully cooked. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Lower the heat to medium, then add the onion and sauté for about 3 minutes until translucent. Add in the minced garlic and sliced mushrooms, cooking for another 5-6 minutes until the mushrooms are tender and browned.

        Create the Sauce: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well to combine. Sprinkle in the dried thyme, and season with salt and pepper. Bring the mixture to a simmer.

          Combine Beef and Sauce: Return the seared beef to the skillet, stirring to coat with the sauce. Let it simmer for about 5 minutes, or until the beef is fully cooked and tender.

            Finish with Yogurt: Remove the skillet from heat. Stir in the Greek yogurt until well combined, creating a creamy texture. Adjust seasoning with salt and pepper as needed.

              Serve: Toss the cooked whole wheat noodles into the beef mixture and gently combine. Serve immediately while hot, garnished with fresh parsley.
