Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 medium apple, diced (preferably a sweet variety like Fuji or Honeycrisp)

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (walnuts, pecans, or almonds)

1/4 cup raisins or dried cranberries (optional)

1/4 teaspoon vanilla extract

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Wet Ingredients: In a large bowl, combine the unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

Combine Dry Ingredients: In another bowl, mix together the rolled oats, diced apple, chopped nuts, raisins (if using), cinnamon, and salt.

Combine Mixtures: Pour the dry mixture into the bowl with the wet mixture. Stir thoroughly until everything is evenly combined. The mixture should be somewhat sticky.

Spread in Pan: Transfer the mixture into the prepared baking pan. Press it down evenly with a spatula or your hands to create a compact layer. This will help the bars hold together once baked.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges start to turn golden brown and the center feels firm to the touch.

Cooling: Allow the bars to cool in the pan for about 10-15 minutes. Then, using the parchment overhang, lift the bars out of the pan and set them on a wire rack to cool completely.

Cut and Store: Once cooled, cut the bars into squares or rectangles to your preferred size. Store the bars in an airtight container at room temperature for up to a week, or refrigerate for longer shelf life.
