Hatch Chili Veggie Breakfast Pizza

For the Dough:

2 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (about 110°F)

1 tbsp olive oil

1 tsp sugar

½ tsp salt

For the Toppings:

½ cup Hatch green chilies, roasted and diced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 bell pepper (red, yellow, or green), diced

1 cup spinach, fresh

4 large eggs

1 cup shredded mozzarella cheese

½ cup crumbled feta cheese

Salt and black pepper to taste

Olive oil for drizzling

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Prepare the Dough:

    - In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.

        - Mix until a sticky dough forms. Transfer to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

          - Form the dough into a ball and place it in a greased bowl, covering it with a towel. Let it rise in a warm place for about 1 hour or until doubled in size.

            Prepare the Toppings:

              - While the dough is rising, prepare your toppings. Sauté the dicing veggies (onion, bell pepper, and spinach) in a little olive oil over medium heat for about 5 minutes until softened. Season with salt and pepper, and set aside.

                Preheat the Oven:

                  - Preheat your oven to 475°F (245°C) and place a pizza stone or a baking sheet inside to heat.

                    Shape the Pizza:

                      - Once the dough has risen, punch it down and transfer it to a lightly floured surface. Roll it out to your desired thickness (about ½ inch thick) and shape it into a pizza crust.

                        - Carefully transfer the rolled-out dough onto a piece of parchment paper for easy handling.

                          Assemble the Pizza:

                            - Spread the sautéed veggie mixture evenly over the pizza crust, leaving a small border around the edge.

                              - Scatter the diced Hatch green chilies, halved cherry tomatoes, and shredded mozzarella cheese over the top.

                                - Create 4 small wells in the cheese for the eggs and crack an egg into each well. Season the eggs with a pinch of salt and pepper.

                                  Bake the Pizza:

                                    - Carefully slide the pizza (with the parchment paper) onto the preheated stone or baking sheet. Bake for 12-15 minutes or until the crust is golden and the eggs are cooked to your liking.

                                      Finish and Serve:

                                        - Once baked, remove the pizza from the oven and let it cool for a minute. Sprinkle crumbled feta cheese over the top and drizzle with olive oil.

                                          - Garnish with fresh cilantro or chopped green onions if desired. Slice and serve warm.
