2 large flour tortillas

1 cup cooked chicken, shredded (grilled or rotisserie)

1/2 cup Hatch green chiles, roasted and diced

1/4 cup ranch dressing

1/2 cup mixed greens (spinach, arugula, or lettuce)

1/4 cup shredded cheese (cheddar or Monterey Jack)

1/4 cup diced tomatoes

1/4 cup red onion, thinly sliced

1 avocado, sliced

Salt and pepper to taste

Prepare the Chicken: If you're using leftover chicken, shred it. If cooking fresh chicken, season it with salt and pepper, grill or pan-cook until fully cooked, and shred once cooled.
