1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup buttermilk

¼ cup unsalted butter, melted

2 large eggs

1 cup shredded cheddar cheese

1 cup roasted Hatch green chilies, chopped

1 pound cooked sausage (breakfast or Italian), crumbled

1 tablespoon honey (optional, for sweetness)

Cooking spray or additional butter for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin pan or standard muffin pan with cooking spray or butter.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt until evenly combined.

      Mix Wet Ingredients: In a separate bowl, combine the buttermilk, melted butter, and eggs. If you’re using honey for added sweetness, stir it in as well.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Avoid overmixing, as this can lead to dense cornbread.

          Add Cheese and Chilies: Fold in the shredded cheddar cheese, chopped Hatch green chilies, and crumbled sausage until evenly distributed throughout the batter.

            Fill the Muffin Pan: Using a spoon or a small ice cream scoop, fill each muffin cup about ¾ full with the batter.
