1/4 cup pure maple syrup (or honey)

1/2 cup coconut flour

1/4 tsp sea salt

1 cup dark chocolate chips (70% cocoa or higher)

1 tbsp coconut oil

Prepare the Peanut Butter Filling: In a mixing bowl, combine the natural peanut butter, maple syrup, coconut flour, and sea salt. Stir until you achieve a thick, moldable dough. If the mixture is too sticky, add more coconut flour, one tablespoon at a time.

    Mold the Peanut Butter Cups: Line a muffin tin with paper liners. Divide the peanut butter mixture evenly among the liners, pressing down gently to flatten and create an even layer. Use about 2 tablespoons of the mixture for each cup. Place the muffin tin in the freezer while you prepare the chocolate.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring each time until melted and smooth.

        Assembly: Remove the muffin tin from the freezer. Pour a spoonful of the melted chocolate over each peanut butter layer, covering it completely. Gently tap the muffin tin on the counter to settle the chocolate.

          Chill and Set: Place the muffin tin back in the freezer for about 30 minutes, or until the chocolate is fully hardened.
