Grilled Veggie Quinoa Bowls

1 cup quinoa

2 cups vegetable broth (or water)

1 medium zucchini, sliced

1 bell pepper (any color), sliced

1 cup cherry tomatoes, halved

1 red onion, cut into wedges

1 cup corn (fresh, frozen, or canned)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Juice of 1 lime

Optional toppings: Avocado slices, feta cheese, or a dollop of Greek yogurt

Cook the Quinoa: Rinse the quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil over high heat, then reduce to a simmer, cover, and cook for about 15 minutes or until the broth is absorbed. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and set aside.

    Prepare the Veggies: While the quinoa is cooking, preheat your grill (or grill pan) over medium-high heat. In a large bowl, combine the sliced zucchini, bell pepper, cherry tomatoes, red onion, and corn. Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to evenly coat.

      Grill the Vegetables: Place the seasoned vegetables on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
