Grilled Veggie Pesto Pasta

12 oz (340g) pasta (your choice: penne, fusilli, or spaghetti)

1 medium zucchini, sliced

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 cup cherry tomatoes, halved

1 red onion, sliced

1 cup fresh basil leaves

½ cup extra virgin olive oil

¼ cup pine nuts (toasted)

2 cloves garlic, minced

Salt and pepper to taste

Grated Parmesan cheese (for serving, optional)

Lemon wedges (for serving, optional)

Instructions
 

Prepare the Pasta:

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

      Grill the Vegetables:

        Preheat your grill or grill pan over medium heat. Toss the zucchini, red and yellow peppers, cherry tomatoes, and red onion with a drizzle of olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, turning occasionally until tender and slightly charred. Remove from the grill and let them cool slightly.

          Make the Pesto:

            In a food processor, combine the basil leaves, toasted pine nuts, minced garlic, and a pinch of salt and pepper. Pulse until finely chopped. Gradually add the olive oil while the processor is running until the mixture is smooth. Adjust taste and consistency by adding more olive oil or salt as needed.

              Combine Everything:

                In a large mixing bowl, combine the cooked pasta and grilled vegetables. Add the pesto and a splash of the reserved pasta water to help bind the pasta and sauce. Toss everything together until evenly coated.

                  Serve:

                    Plate the grilled veggie pesto pasta and sprinkle with grated Parmesan cheese if desired. Add a squeeze of lemon juice for brightness, and serve with lemon wedges on the side.
