Ingredients

2 large whole wheat flatbreads

1 cup cherry tomatoes, halved

1 cup bell peppers (red, yellow, or green), sliced

1 medium zucchini, thinly sliced

1 red onion, thinly sliced

1 cup baby spinach leaves

1 cup feta cheese, crumbled

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup basil leaves, fresh, for garnish

Balsamic glaze, for drizzling (optional)

Instructions

Preheat the Grill: Start by preheating your grill to medium-high heat. You can use a grill pan or a direct grill for this recipe.

Prepare the Vegetables: In a large bowl, combine the cherry tomatoes, bell peppers, zucchini, and red onion. Drizzle with olive oil, sprinkle with Italian seasoning, and season with salt and pepper. Toss until the vegetables are evenly coated.

Grill the Veggies: Place the prepared vegetables directly on the grill grates or on a grill pan. Cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks. Remove from the grill and set aside.

Prepare the Flatbreads: While the veggies are grilling, lay the flatbreads on the grill for 1-2 minutes on each side to warm them and create grill marks. This step adds flavor and helps to keep the flatbreads sturdy.

Assemble the Flatbreads: Once the flatbreads are grilled, layer the spinach leaves evenly on top of each flatbread. Next, distribute the grilled vegetables evenly over the spinach. Finally, sprinkle the crumbled feta cheese on top.

Final Grill: Place the assembled flatbreads back on the grill for another 2-3 minutes, just until the cheese starts to melt and char slightly. Pay close attention to avoid burning.

Garnish and Serve: Remove the flatbreads from the grill. Garnish with fresh basil leaves and drizzle with balsamic glaze if desired. Cut into slices and serve immediately.
