4 ears of fresh sweet corn, husked

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and finely diced (optional for heat)

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional for extra flavor)

Feta cheese or cotija cheese for garnish (optional)

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Corn: Place the husked corn directly on the grill grates. Grill the corn for about 10-12 minutes, turning occasionally, until the kernels are charred and cooked through. Remove from the grill and let cool slightly.

      Cut the Corn: Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cob into a large mixing bowl.

        Combine Salad Ingredients: To the bowl of corn, add the diced avocados, halved cherry tomatoes, chopped red onion, and cilantro. If using, fold in the diced jalapeño for some heat.

          Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and smoked paprika until combined.

            Dress the Salad: Pour the dressing over the corn and avocado mixture. Gently toss until everything is well coated.
