Grilled Peach & Burrata Salad

Ingredients
  

2 ripe peaches, halved and pitted

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

4 cups arugula or mixed greens

8 ounces burrata cheese

1/4 cup toasted pistachios, roughly chopped

1/4 cup fresh basil leaves, torn

1 tablespoon balsamic vinegar

1 teaspoon honey (optional)

Instructions
 

Preheat the Grill: Heat your grill or grill pan over medium-high heat.

    Prepare the Peaches: Brush the cut side of each peach half with olive oil and season with a pinch of salt and pepper.

      Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 3-5 minutes, or until grill marks appear and the peaches become slightly softened. Remove from the grill and let cool slightly.

        Assemble the Salad: In a large bowl, place the arugula or mixed greens. Tear the grilled peaches into smaller pieces and add them to the greens.

          Add Burrata: Gently tear the burrata into pieces and add it on top of the salad.

            Finish the Salad: Sprinkle the toasted pistachios and torn basil leaves over the top.

              Make the Dressing: In a small bowl, whisk together the balsamic vinegar and honey until well combined (if using honey). Drizzle this dressing over the salad and gently toss to combine.

                Serve: Transfer the salad onto a serving platter or individual plates and enjoy immediately!
