4 salmon fillets (about 6 oz each)

3 tablespoons olive oil

3 cloves garlic, minced

Juice and zest of 2 lemons

1 teaspoon honey

1 teaspoon dried oregano

Salt and pepper to taste

For the Grain Base:

2 cups cooked quinoa or brown rice

1 tablespoon olive oil

Salt to taste

For the Vegetables:

2 cups cherry tomatoes, halved

1 cucumber, diced

1 bell pepper, diced (any color)

1 avocado, sliced

Fresh parsley or cilantro, chopped (for garnish)

For the Dressing:

3 tablespoons tahini

2 tablespoons lemon juice

1 tablespoon maple syrup (optional)

Water to thin (as needed)

Salt to taste

Marinate the Salmon: In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, honey, oregano, salt, and pepper. Add salmon fillets and coat well. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare the Grain Base: If using quinoa or brown rice, cook according to package instructions. Once done, fluff with a fork, drizzle with olive oil, and season with a pinch of salt. Keep warm.
