Ingredients
  

4 ears of fresh corn, husked

1 medium red bell pepper, diced

1 medium red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice preference)

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons extra virgin olive oil

Salt and pepper to taste

12 small bell pepper cups or mini tortilla bowls (for serving)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates. Grill for about 8-10 minutes, turning occasionally until the kernels are charred and tender. Once done, remove from the grill and let cool slightly. Cut the kernels off the cob and set aside.

    Mix the Salsa: In a large mixing bowl, combine the grilled corn kernels, diced red bell pepper, chopped red onion, minced jalapeño, and quartered cherry tomatoes. Gently toss to incorporate all the ingredients evenly.

      Dress the Salsa: Drizzle the olive oil and lime juice over the mixture. Add the chopped cilantro and season with salt and pepper. Mix well until all ingredients are coated with the dressing.

        Prepare the Serving Cups: If using bell pepper cups, cut the tops off the mini bell peppers and remove the seeds. If using tortilla bowls, simply set them on a serving platter. Fill each cup with the fresh grilled corn salsa.
