Grilled Corn and Avocado Salsa

4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional for added depth)

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates. Grill for 8-10 minutes, turning occasionally, until the kernels are charred and tender. Remove from heat and let cool.

    Prepare the Ingredients: While the corn is cooling, prepare the other ingredients. In a large mixing bowl, combine the diced avocados, chopped red onion, halved cherry tomatoes, minced jalapeño, and chopped cilantro.

      Cut the Corn: Once the grilled corn is cool enough to handle, use a sharp knife to slice the kernels off the cob. Add the corn kernels to the bowl with the avocado and other ingredients.

        Dress the Salsa: In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and smoked paprika, if using. Pour this dressing over the salsa mixture.

          Toss and Serve: Gently toss all the ingredients together until well combined. Adjust seasoning with extra salt, pepper, or lime juice as needed. Serve fresh or let it sit for about 30 minutes to meld the flavors.
