Instructions

Marinate the Chicken:

    - In a bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, pepper, and lime juice. Whisk together.

      - Add the chicken breasts to the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

        Prepare the Street Corn Sauce:

          - In a skillet over medium heat, add the corn kernels and cook for about 5-7 minutes until they are slightly charred. This enhances their sweetness and flavor.

            - In a large mixing bowl, combine the cooked corn, mayonnaise, sour cream, Cotija cheese, chili powder, lime juice, and chopped cilantro. Mix well and season with salt to taste.

              Grill the Chicken:

                - Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill.

                  - Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). The chicken should have nice grill marks and be cooked through.

                    - Remove from heat and let rest for a few minutes before slicing.

                      Serve:

                        - Plate the grilled chicken and generously spoon the street corn sauce over the top.

                          - Garnish with additional Cotija cheese, lime wedges, and chopped cilantro for a fresh finish.

                            Enjoy:

                              - Serve with your favorite sides, such as rice, grilled vegetables, or a simple salad. Enjoy the smokiness of the grilled chicken combined with the rich, zesty flavors of the street corn sauce!
