Grilled Chicken with Peach Salsa

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced

½ red onion, finely chopped

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, dried oregano, lime juice, salt, and pepper.

      - Add the chicken breasts to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

        Prepare the Peach Salsa:

          - In a medium bowl, mix together the diced peaches, red onion, jalapeño, cilantro, lime juice, and salt.

            - Allow the salsa to sit for at least 15 minutes to let the flavors meld.

              Preheat the Grill:

                - Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

                  Grill the Chicken:

                    - Remove the chicken from the marinade and place it onto the preheated grill.

                      - Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

                        Serve:
