2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup fresh cilantro, chopped

4 large flour tortillas

1 medium red bell pepper, sliced

1/2 medium onion, thinly sliced

1 jalapeño, sliced (optional, for heat)

Sour cream, avocado, and salsa for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts and coat thoroughly. Let it marinate for at least 30 minutes (or longer for deeper flavor).

    Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for 5 minutes before slicing into thin strips.

      Sauté the Veggies: In a skillet over medium heat, sauté the sliced bell pepper, onion, and jalapeño (if using) in a little olive oil until they are soft and lightly caramelized, about 5-7 minutes. Set aside.

        Assemble the Quesadillas: Heat a separate large skillet or griddle over medium heat. Place one tortilla in the skillet, and sprinkle half of the Monterey Jack and cheddar cheese over it. Layer on the sliced grilled chicken, sautéed veggies, and chopped cilantro. Top with the remaining cheese and cover with a second tortilla.

          Grill the Quesadilla: Cook for about 3-4 minutes or until the bottom tortilla is golden and crispy. Carefully flip the quesadilla with a spatula, and cook for an additional 3-4 minutes on the other side until crispy and the cheese has melted.

            Repeat the Process: Remove the cooked quesadilla from the skillet and repeat the process with the remaining ingredients to make additional quesadillas.

              Slice and Serve: Cut the quesadillas into wedges and serve warm with sour cream, avocado slices, and salsa on the side.
