Grilled Chicken & Peach Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into quarters

1/4 cup olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

2 teaspoons Dijon mustard

2 teaspoons garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

8-10 skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Marinate the Chicken:

    - In a large mixing bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, garlic powder, dried thyme, salt, and pepper until well combined.

      - Add the cubed chicken to the bowl and gently toss to coat. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, up to 2 hours for maximum flavor.

        Prepare the Skewers:

          - Once the chicken is marinated, preheat your grill to medium-high heat.

            - Thread the marinated chicken, peach wedges, red bell pepper pieces, and red onion quarters onto the skewers, alternating between each ingredient. For instance, chicken, bell pepper, peach, onion, and repeat.

              Grill the Skewers:

                - Lightly oil the grill grates to prevent sticking. Place the prepared skewers on the grill.

                  - Grill each side for about 4-5 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C) and the peaches are slightly caramelized.

                    Serve:

                      - Remove the skewers from the grill and let them rest for a minute. If desired, drizzle with more balsamic vinegar and sprinkle with fresh herbs or a little extra thyme before serving.

                        - Serve warm, either on their own or with a fresh salad for a complete meal.
