Grilled Chicken & Corn Caesar Salad

Ingredients
  

2 boneless, skinless chicken breasts

1 cup fresh corn kernels (can use canned or frozen)

4 cups romaine lettuce, chopped

1/2 cup Caesar dressing (store-bought or homemade)

1/4 cup grated parmesan cheese

1/4 cup croutons

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Preheat your grill to medium-high heat.

      - Rub the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper.

        - Let it marinate for at least 15 minutes while you prepare the other ingredients.

          Grill the Chicken:

            - Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

              - Remove from the grill and let it rest for 5 minutes before slicing into strips.

                Grill the Corn:

                  - If using fresh corn, grill the ears directly on the grill for about 10-12 minutes, turning occasionally until charred. If using canned or frozen corn, just sauté in a pan with a bit of olive oil until heated through.

                    - Once cooked, let it cool slightly, then cut the kernels off the cob if using fresh.

                      Assemble the Salad:

                        - In a large bowl, combine the chopped romaine lettuce, grilled corn, and sliced chicken.

                          - Drizzle with Caesar dressing and toss gently to combine.

                            Finish the Salad:

                              - Sprinkle grated parmesan cheese and croutons on top of the salad. Squeeze fresh lemon juice over everything for an added zing.

                                - Garnish with chopped fresh parsley if desired.

                                  Serve:

                                    - Spoon the salad into serving bowls, ensuring a good mix of chicken, corn, and dressing in each bowl. Enjoy!
