4 large whole grain tortillas

1 cup fresh spinach leaves

1 medium avocado, sliced

1 cup shredded carrots

1 cup bell peppers, julienned (red, yellow, or orange for color)

½ cup canned black beans, rinsed and drained

½ cup corn kernels (fresh or frozen)

1 small red onion, thinly sliced

¼ cup cilantro, chopped

1-2 fresh green chilies, finely chopped (adjust for spice preference)

½ teaspoon cumin powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup Greek yogurt or sour cream (for spreading)

Lime wedges (for serving)

Prep the Veggies: Start by washing all your fresh vegetables. Dry thoroughly and then chop the spinach, avocado, bell peppers, and cilantro. Drain and rinse the black beans and corn if using canned.

    Make the Filling: In a large mixing bowl, combine the spinach, avocado, shredded carrots, bell peppers, black beans, corn, red onion, cilantro, and green chilies. Sprinkle with cumin powder, smoked paprika, salt, and pepper. Gently mix until everything is well distributed.
