1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

2 tablespoons sugar

1 cup buttermilk

2 large eggs

¼ cup melted butter

1 cup diced green chilies (fresh or canned, drained)

½ cup shredded cheddar cheese

For the Slider Filling:

1 pound ground beef (or plant-based substitute)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded lettuce

½ cup diced tomatoes

½ cup sliced jalapeños (optional)

½ cup sour cream or Greek yogurt for topping

Preheat the Oven: Preheat your oven to 400°F (200°C) and grease or line a muffin tin with paper liners.

    Make the Cornbread Batter: In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar. In another bowl, mix the buttermilk, eggs, and melted butter. Gradually combine the wet and dry ingredients until just moistened. Fold in the diced green chilies and shredded cheddar cheese.

      Bake the Muffins: Pour the cornbread batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean. Let them cool slightly in the tin before transferring to a wire rack.

        Prepare the Slider Filling: In a skillet over medium-high heat, cook the ground beef (or substitute) until browned. Drain excess fat if necessary.
