Ingredients

2 large russet potatoes, peeled and grated

1 ½ cups shredded cheddar cheese

6 large eggs

1 cup diced cooked bacon or cooked sausage (optional)

⅓ cup milk

1 tsp garlic powder

½ tsp onion powder

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Hash Browns:

      - After grating the potatoes, place them into a clean kitchen towel and squeeze out excess moisture. This helps to achieve crispy hash browns.

        - In a mixing bowl, combine the grated potatoes with half of the shredded cheese, garlic powder, onion powder, salt, and pepper.

          Form the Cups:

            - Grease a standard muffin tin with cooking spray or olive oil.

              - Evenly distribute the potato mixture into the muffin cups, pressing down to form a small cup shape that lines the edges. Ensure the bottom is also well-packed.

                Pre-bake the Hash Brown Cups:

                  - Bake the potato cups in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.

                    Prepare the Egg Mixture:

                      - In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in any optional add-ins like cooked bacon or sausage, and the remaining shredded cheese.

                        Fill the Cups:

                          - Once the hash brown cups are pre-baked, remove them from the oven. Carefully pour the egg mixture into each hash brown cup, filling them almost to the top.

                            Bake Again:

                              - Return the muffin tin to the oven and bake for an additional 15-18 minutes, or until the egg is set and golden.

                                Cool and Serve:

                                  - Allow the cups to cool for a few minutes before gently removing them from the muffin tin. Garnish with chopped chives or parsley before serving.

                                    Prep Time, Total Time, Servings:

                                      20 minutes | 50 minutes | 6 servings
