Go Back
Gingerbread has a rich and storied history that dates back to ancient civilizations. Originally, the use of ginger in baked goods can be traced back to the Greeks and Romans, who used it for its medicinal properties. However, it wasn't until the Middle Ages that gingerbread began to evolve into the sweet, spiced treat we know today.

Ingredients

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup molasses

1 tsp vanilla extract

2 tsp ground ginger

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground cloves

1/4 tsp salt

1/4 cup mini chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Unsweetened shredded coconut (for rolling)

Instructions

Mix the Base: In a large mixing bowl, combine rolled oats, almond butter, honey (or maple syrup), and molasses. Stir until well combined.

Add Spices: Sprinkle in the ground ginger, cinnamon, nutmeg, cloves, and salt. Stir until all ingredients are evenly mixed.

Incorporate Extras: If desired, fold in the mini chocolate chips and chopped nuts for added texture and flavor.

Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for about 30 minutes. This helps the mixture firm up and makes it easier to shape.

Form the Bites: Once the mixture is chilled, take out small portions (about a tablespoon's worth) and roll them into balls. If desired, roll each ball in shredded coconut for an extra flair.

Store: Place the formed energy bites in an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer storage.

Enjoy: Grab these bites as a quick breakfast, snack, or post-workout treat!
