Ginger Honey Glazed Ham

1 fully cooked bone-in ham (6-8 lbs)

1 cup honey

1/2 cup brown sugar

1/4 cup soy sauce

2 tablespoons fresh ginger, grated

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

Zest of 1 orange

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Ham: Score the surface of the ham in a diamond pattern, making shallow cuts about 1 inch apart. This will help the glaze penetrate and enhance the flavor.

      Make the Ginger Honey Glaze: In a medium saucepan over medium heat, combine the honey, brown sugar, soy sauce, grated ginger, minced garlic, Dijon mustard, ground cinnamon, ground cloves, black pepper, cayenne pepper (if using), and orange zest. Stir until the mixture is well combined and the sugar has dissolved. Bring it to a simmer and let it bubble gently for about 5 minutes. Remove from heat and set aside.

        Glaze the Ham: Place the ham on a rack in a large roasting pan. Brush half of the ginger honey glaze over the ham, making sure to cover the scored areas well.

          Bake the Ham: Pour 1 cup of water into the bottom of the roasting pan to maintain moisture while baking. Cover the ham loosely with aluminum foil and bake for 1.5 hours, basting every 30 minutes with the remaining glaze.

            Caramelize the Glaze: After the initial baking time, remove the foil and increase the oven temperature to 425°F (220°C). Continue baking for an additional 30-45 minutes, basting with the glaze every 15 minutes, until the ham is nicely caramelized and heated through. The internal temperature should reach at least 140°F (60°C).

              Rest and Serve: Once the ham is done, remove it from the oven and let it rest for 15-20 minutes before carving. Garnish with fresh parsley if desired. Slice and serve with your favorite sides!
