Ingredients

4 medium parsnips, peeled and cut into fries

3 tablespoons olive oil

3 tablespoons grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Parsnips: In a large bowl, add the cut parsnip fries. Drizzle with olive oil and toss until they are well coated.

Season: Add minced garlic, grated Parmesan cheese, dried oregano, paprika, salt, and pepper to the parsnips. Toss everything together until the parsnips are evenly coated in the mixture.

Arrange on Baking Sheet: Spread the seasoned parsnip fries in a single layer on the prepared baking sheet, ensuring they don’t overlap for even roasting.

Roast in the Oven: Bake for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.

Serve: Remove from the oven, garnish with fresh chopped parsley, and serve immediately as a delightful appetizer or side dish!
