Ingredients

4 medium-sized russet potatoes

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon paprika

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: sour cream or Greek yogurt for serving

Instructions

Preheat your oven: Start by preheating your oven to 425°F (220°C).

Prepare the potatoes: Clean the potatoes thoroughly under running water and pat them dry with a paper towel. Place each potato on a cutting board and use a sharp knife to make deep cuts about 1/8 inch apart, stopping about 1/4 inch from the bottom to ensure the potato stays intact.

Make the garlic butter mixture: In a small bowl, combine the melted butter, minced garlic, salt, black pepper, onion powder, and paprika. Whisk until well combined.

Brush the potatoes: Place the potatoes on a baking sheet lined with parchment paper, and lovingly brush the garlic butter mixture all over the potatoes, making sure to get it into the cuts.

Bake the potatoes: Bake the potatoes in the preheated oven for 40-45 minutes, until they are tender and the edges become crispy.

Add the Parmesan: Remove the potatoes from the oven and sprinkle the grated Parmesan cheese generously over the top, getting it into the cuts. Return to the oven and bake for an additional 10 minutes, until the cheese is melted and golden brown.

Garnish: Once out of the oven, sprinkle freshly chopped parsley over the potatoes for a pop of color and freshness.

Serve: Serve the Hasselback potatoes warm, along with a side of sour cream or Greek yogurt for dipping if desired.
