4 cloves garlic, minced

1/4 cup olive oil

1 tsp red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into rounds

1 bell pepper (red or yellow), sliced

1 small red onion, sliced

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Grilled Veggies:

    - Preheat the grill or a grill pan over medium-high heat.

      - In a mixing bowl, combine the sliced zucchini, bell pepper, and red onion. Drizzle with 1 tablespoon of olive oil and season with oregano, salt, and pepper. Toss until evenly coated.

        - Grill the vegetables for about 4-5 minutes on each side until they are tender and have grill marks. Remove from the grill and set aside.

          Cook the Spaghetti:

            - While the veggies are grilling, bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the spaghetti.

              Make the Garlic Herb Sauce:

                - In the same pot, heat the remaining olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 1-2 minutes until fragrant (be careful not to burn the garlic).

                  Combine Pasta and Sauce:

                    - Add the drained spaghetti to the pot with the garlic oil. Toss to coat well. If the pasta seems dry, add in a little reserved pasta water to achieve a glossy, smooth consistency.
