Garlic Herb Roasted Sweet Corn Tacos

4 large ears of fresh sweet corn, husked

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

1 tablespoon fresh lime juice

1 tablespoon chopped fresh cilantro

1 tablespoon chopped fresh basil

8 small corn tortillas

1 avocado, sliced

1 cup crumbled feta cheese (optional)

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Corn: Husk the sweet corn and place the ears on a baking sheet. Brush them with olive oil, ensuring they are evenly coated.

      Season the Corn: In a small bowl, mix the minced garlic, smoked paprika, cumin, salt, and pepper together. Rub this mixture over the corn, ensuring it’s spread well.

        Roast the Corn: Roast the corn in the preheated oven for about 20-25 minutes, turning once halfway, until the kernels are slightly caramelized and tender.

          Cut the Kernels: Once the corn is roasted, remove it from the oven and let it cool for a few minutes. Using a sharp knife, carefully cut the kernels off the cob and place them in a mixing bowl.

            Add Fresh Herbs: To the bowl with corn kernels, add lime juice, chopped cilantro, and chopped basil. Gently mix everything together and taste for seasoning. Adjust salt and pepper as needed.

              Heat the Tortillas: While the corn mixture cools, heat the corn tortillas on a skillet or an open flame for about 30 seconds on each side until warm and pliable.

                Assemble the Tacos: Place a generous spoonful of the garlic herb roasted sweet corn mixture onto each tortilla. Top with sliced avocado and crumbled feta cheese if desired.
