1 lb fresh radishes, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Zest of 1 lemon (for added brightness)

Preheat your oven: Start by preheating your oven to 425°F (220°C). This high temperature will help the radishes caramelize beautifully.

    Prepare the radishes: In a large mixing bowl, combine the halved radishes with the olive oil, minced garlic, dried thyme, dried oregano, sea salt, and black pepper. Toss well until all the radishes are evenly coated with the seasoning mix.

      Arrange on a baking sheet: Spread the seasoned radishes out in a single layer on a large baking sheet. Make sure they aren't overcrowded to ensure they roast evenly and get a nice golden color.
