12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

½ cup vegetable or chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of ½ lemon

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Cream Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, pour in the vegetable or chicken broth, scraping up any bits stuck to the bottom of the pan. Stir in the heavy cream and bring to a gentle simmer.

        Add Cheese and Spinach: Lower the heat, then gradually whisk in the grated Parmesan cheese until melted and creamy. Add the fresh spinach, stirring until wilted. If the sauce is too thick, you can add a little of the reserved pasta water to reach your desired consistency.
