1 pound large shrimp, peeled and deveined

1 cup quinoa, rinsed

2 cups vegetable or chicken broth

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

1 lemon, zested and juiced

1 tablespoon fresh parsley, chopped (plus extra for garnish)

Salt and pepper to taste

Optional: Red pepper flakes for heat

Cook the Quinoa: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let it simmer for 15 minutes, or until all the liquid is absorbed. Once done, remove from heat and let it stand covered for 5 minutes. Fluff with a fork.

    Prepare the Shrimp: While the quinoa is cooking, heat a large skillet over medium heat. Add 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet. Season with paprika, lemon zest, salt, and pepper. Cook for about 2-3 minutes on each side or until the shrimp turn pink and are opaque. If using, sprinkle red pepper flakes for a spicy kick.

        Finish with Lemon and Herbs: Once the shrimp are cooked, squeeze the lemon juice over them and stir in the remaining 2 tablespoons of butter. Add the chopped parsley and mix well.

          Combine: Serve the garlic butter shrimp over a bed of fluffy quinoa. Garnish with additional parsley and a slice of lemon if desired.
