Ingredients

1 lb fresh green beans, trimmed

3 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

1 cup roasted unsalted cashews

1 tablespoon soy sauce (or tamari for gluten-free)

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Green Beans: In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until they are bright green and slightly tender. Immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain and set aside.

Melt the Butter: In a large skillet over medium heat, melt the unsalted butter until it starts to foam slightly.

Sauté the Garlic: Add the minced garlic and red pepper flakes to the melted butter. Sauté for about 1 minute or until fragrant but not browned.

Add the Green Beans: Toss the blanched green beans into the skillet, stirring to coat them well in the garlic butter. Sauté for an additional 4-5 minutes, allowing them to absorb the flavors and get tender-crisp.

Incorporate the Cashews: Stir in the roasted cashews, soy sauce, lemon zest, and lemon juice. Cook for another 2-3 minutes, mixing until everything is well combined and heated through.

Season: Taste the mixture and season with salt and pepper according to your preference.

Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve warm as a delicious side dish or a light vegetarian main.
