2 cups fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust to taste)

1/2 cup freshly squeezed lemon juice (about 4 lemons)

1 tablespoon lemon zest

1 cup plain Greek yogurt (or your favorite dairy-free alternative)

1 teaspoon vanilla extract

Pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries and honey or maple syrup. Toss to coat and let them sit for about 10-15 minutes, allowing the strawberries to release their juices.

    Blend the Ingredients: In a blender or food processor, add the macerated strawberries (including the syrup), freshly squeezed lemon juice, lemon zest, Greek yogurt, vanilla extract, and a pinch of salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if necessary.
